Ingredients for 4 persons

  • twenty beautiful gambas (5 per person)
  • 25 cl of orange juice
  • 25 cl of lemon juice
  • 25 cl of pineapple juice
  • 25 cl of beer juice
  • 50 cl of mead ½ dry or dry
  • 5 medium shallots
  • 2 or 3 Cayenne peppers
  • 50 gr of butter


  • In a large container or freezer, mix all liquids
  • Chop the shallots and chillies and pour them into the container
  • Put the prawns (thawed) in the container, Marinate for ten hours (at least 5 to 6 hours)
  • Remove the prawns from the marinade, dry them, shell them
  • Sauté in a hot buttered pan until they turn a nice golden color
  • Keep the prawns warm while the pan is deglazed with about half of the marinade, which is left to reduce.
  • Serve prawns drizzled with reduced juice
