Chouchen Vieux Doux undergoes a slow fermentation in casks. It matures for 24 to 36 months on lees, depending on the needs of the cuvée. This gives it time to develop its deep aromas, which are revealed in the mouth. Drawn directly from the barrel, it is not blended.

This Chouchen Vieux Doux evolves with time: when young, it is simple and pleasant, and takes on roundness and sensuality with age.
