This Chouchen Vieux Sec is very special and the opposite of the usual idea of a mead.
Chouchen vieux sec is fermented directly in barrels. It matures in casks for a minimum of 24 months, the time it takes to develop its flavour.
It is a dry wine: if the honey flavours remain, the sugar is absent at the end of the mouth.
Very hard and surprising, this vintage is reserved for demanding mead lovers.
This chouchen can accompany shellfish and oysters. It will surprise you when served chilled with a very sweet dessert such as a kouing amann ...
