The Chouchen Dragon is, like the Tara Chouchen, a complex and richly flavoured chouchen. It is blended after several years of maturation in oak barrels.
Fermentation lasts 4/5 months. This slow process is carried out directly in oak barrels. At the end of the fermentation, the Dragon Chouchen will mature on its lees for many years.
This slow fermentation results in a mead for ageing. The Dragon mead will keep its taste qualities for years. Its taste, very recognisable by connoisseurs, will evolve over time. It will nevertheless retain its particularities throughout its ageing.
